Lauren and Jeff are a married couple we met sitting at the table next to us during dinner at Roma Sparita. Like us, they came to feast on the restaurant’s signature dish Cacio e Pepe, a dish made famous to us by Anthony Bourdain on his “No Reservations” episode in Rome. Lauren and Jeff live in Studio City, CA. Lauren works as a consultant for a litigation agency and Jeff is in risk management for a bank. They are both originally from California but have spent the majority of their lives traveling the world. Together, they have traveled all over South America, Asia, and most of The States. It was their first time to Europe when we met, as they had planned a two week stay in Italy and France. Their favorite country to visit, thus far, has been Thailand. They raved about its beauty, the people, the cheap cost, and these secret mushroom milkshakes?…
